I haven't eaten may of the game food or dogs for ethical reasons. GAme meats that are not endangered like deer, quails, etc...are OK. They're just not that common. I don't want to eat snake, bear, etc...There are so many good things to eat already w/o resorting to endangered animals.

I've eaten Tiet canh before but for many years don't care for anyting made with blood, cooked or raw. Testicle, why not? Have you had rocky mountain oyster?

I've never heard of Rocky Mountain Oysters.  I thought they are just breaded fried oysters until I looked it up.  Looks like pretty good testicles.

Has anyone ever heard of phở cuốn bảy màu?  I haven't even tried regular phở cuốn.

doesn't look good.

I like natural food, even when the colors are not vibrant.

I think the colors are all natural like in Xôi 7 màu.  It's not food coloring.

Màu đỏ tươi thì dùng lá xôi đũa đem luộc cho kỹ, lọc lấy nước đó dùng để ngâm gạo.
Màu tím cũng được lấy từ lá xôi đũa nhưng còn cần giã với tro bếp (tro của than củi), lá trước khi giã đem đốt cho hơi héo rồi giã với tro bếp theo tỉ lệ định sẵn rồi mới đêm đi ngâm gạo.
Màu xanh cửu long thì được lấy từ màu của hỗn hợp lá xôi hoa và tro bếp, làm theo tỉ lệ đã định và đem đi ngâm gạo. Sao cho khi vớt ra gạo có mùa xanh cửu long nhạt khi đồ lên sẽ được màu chuẩn, còn nếu bị đậm màu khi đồ sẽ sang màu chàm.
Màu xanh lá thì phải dùng gạo nếp đã ngâm ngả sang vàng ngâm cùng nước xôi màu xanh cửu long với lượng vừa đủ.
Màu nâu có được từ việc ngâm gạo màu đỏ cờ rồi ngầm tiếp với lá xôi đũa và tro trong vòng 1 giờ rồi vớt ra.
Màu đỏ thẫm là màu khó nhuộm nhất, phải dùng gạo nếp đã nhuộm đỏ đem ngâm với lá xôi hoa theo tỉ lệ có sẵn. Tỉ lệ này phải vô cùng chính xác vì nếu chỉ cần sai một chút sẽ không ra được màu như ý.

wow, I didn't know natural coloring can be so vivid. But from the description, it sounds like a lot of work. I wonder how many vendors actually stick the natural techniques. I can see this work if you actually advertise this for upscale establishment and charge  more money, esp good for dessert shops.
