I heard Vietnamese cuisine in France was bad in general, but I may be wrong.  Apparently the community there is very well assimilated, maybe that has something to do with it

They call it "phở"?

The Chinese-Vietnamese places do, but it tastes like really basic beef noodle soup. You can't sense any of the spices imo, and it's very greasy.

I never pour mắm or sate into bún bò huế, actually I don't know if you're suppose to eat bbh with sate. The goodness of bún bò huế doesn't rely on that.

I don't put them in as condiments before eating, but I believe they're essential parts of the stock.  The sate is what makes it spicy and gives it that red color (although I suppose you can just use mau dau dieu).   At least that's the kind I've grown up eating and that's how I also make it.  I think it may vary depending on what region you're from though.  Some people even put a big chunk of pineapple in the broth (not for eating but to purify the broth).

What the heo, a Vietnamese buffet? I've never actually heard of that.  And with all of those aforementioned dishes too? (Hard to keep up with in a buffet setting).

Yeah, I went to this buffet once in a while.

Pho in Berlin tastes ok but not great.  Also, what´s the deal with all these Chinese restaurants hiring mainly Vietnamese waiters?
