I've just made banh chung with the instant pot. It takes only 1.5 hours in the instant pot to make and it doesn't involve too much hassles of 16 hours cooking time and constantly watching and filling the pot with hot water.
Cooking with the instant pot makes it much quicker and doesn't take away any of the flavors or originality of the dish. Like I said before when I was making pho in the instant pot, it removes a lot of the complications of making the dish.
The only problem is it's not big enough to make large quantities.
